Born for the Kitchen: Chef Jasper Versoza and His Tasteful Pursuit of Culinary Excellence

Chef Jasper Versoza

Growing up in a family with a strong passion for food and a catering business, it was easy for Chef Jasper Versoza to figure out his dream. When he was a kid, the smell of freshly cooked dishes was giving him a different kind of excitement. His appetite for excellence, however, motivated him to learn more. He knew he could only find it outside their home kitchen.

"I knew I wanted to cook since I can remember. But I wanted more than that. It has always been my desire to give unique twists to dishes and make food experience more satisfying," said Chef Jasper Versoza, Executive Chef of Josiah’s Catering.

Chef Jasper has always been hungry for new knowledge. He believes that continuous learning is essential to success and important to offer something original to foodies. Despite his exposure to their catering business, he strived to broaden his experience and refine his culinary and entrepreneurial skills at the Center for Culinary Arts, Manila.

"I had to get the best training I could to become the professional chef I have always dreamed of – innovative and explorative. The journey was tough, but it’s all worth it. I have learned a lot about culinary in both theory and practice. Most importantly, I was able to apply everything I have learned in our catering business," Chef Jasper shared.

True enough, his education enabled him to improve the quality of service of Josiah's Catering by adopting the latest food and catering equipment as well as following the best practices in culinary arts. Chef Jasper, however, believes that learning shouldn't stop there. He must explore beyond the kitchen and the classroom. So, he goes to places.

Exploring Food from Different Places and Taking Inspirations

For Chef Jasper, food and geography are related to each other. So, he explores places – both local and international – to taste what each destination has to offer.

"If I want to innovate and serve new food experiences, I have to get out of the kitchen and travel find inspirations. Different places offer different tastes. It's up for you to find it," Chef Jasper explained.

When he travels, Chef Jasper looks for new inspirations, which he applies to his food creations as part of his desire to innovate. He does not only explore food and cuisines, but he also immerses in different cultures to gain new ideas he can mix with his food and restaurant concepts.

He added, “The amount of inspirations and knowledge you can acquire by traveling is amazing. Each time I visit a destination, I make sure that I take home new ideas to experiment on.”

Through his relentless explorations of culinary experiences, Chef Jasper and his siblings were able to introduce innovative restaurant concepts that offer unique gastronomic experiences. One of which is the newly launched Sartin at Summit Ridge Tagaytay. It gives Filipino cuisine a unique twist that’s perfect to complement the cool weather in Tagaytay. It is also the company’s first venture into food and business operations management through its subsidiary Josiah’s Hospitality Management, which is focused on hotels management and food and beverage operations for hotels and resorts.

Another popular restaurant is Fat Daddy’s Smokehouse – a Southern USA-inspired smokehouse and barbecue restaurant that serves perfectly smoked pork ribs, smoked beef brisket, smoked wings and more. It now has branches in Marikina City and at UP Town Center in Katipunan, Quezon City.

Today, Chef Jasper is responsible for the research and development of Josiah’s Catering and its branches of concept restaurant. He makes sure that the quality of food they offer remains world-class and carries the signature taste of Josiah’s.

"Together with my siblings, we are expanding the Josiah’s brand with more distinct restaurant concepts that promise a gastronomic experience that is rewarding and world-class,” Chef Jasper said.

"Di Na Muli" is probably the first-ever Music Video shot inside the Cultural Center of the Philippines

Itchyworms

Di Na Muli was written in 2016 by long-time friends Jazz Nicolas and Wally Acolola. They entered the song into the 5th Philippine Popular (PhilPop) Music Festival, performed by The Itchyworms, where it won the grand prize. Now, in 2018, the song has been given new life in the official soundtrack of the hit film Sid & Aya (Not A Love Story) (Viva Films, starring Dingdong Dantes and Anne Curtis, directed by Irene Villamor).

Somewhere in between PhilPop and Sid & Aya, the Itchyworms set out to immortalize the song. The result was a visually stunning and emotional music video, directed by Paolo Abella. Help also came along in the form of the video's co-director Juno Oebanda, longtime friend of the band, and the generous indulgence of none other than the Cultural Center of the Philippines. The link to the CCP is Teddy Hilado (d. 2015), recognized as the father of lighting design in Philippine theater, who is also the uncle of Oebanda

The song's themes of love, loss, and words left unspoken, are embodied in the elegant performances of Rosky Balahadia Hilado (Teddy's widow, formerly of the Bayanihan Philippine Dance Company) and Carissa Adea (Ballet Philippines), and in the video's sweeping visuals, all captured within the hallowed halls of the CCP. The music video seeks to serve as loving tribute to Teddy, whose influence is still felt and recognized to this day.

The Itchyworms are now proud to share what is probably the first-ever music video shot inside the Cultural Center of the Philippines, and extend heartfelt thanks to those who helped bring the music video to fruition.

Words and Music by Jazz Nicolas and Wally Acolola
Performed by The Itchyworms

Verse:
Nung araw kay tamis ng ating buhay
Puno ng saya at ng kulay
Di mauulit muli

Ang oras kapag hinayaang lumipas
Madarama mo hanggang bukas
Di mababawi muli

Chorus:

Patawad muli
Di na muli

Binawi buhay mo ng walang sabi
Binubulong ko sa sarili
Mahal kita hanggang sa huli
Mahal ko hanggang sa huli

Uratex’s Thin Cotton Mattress Is Both Comfortable and Affordable

Did you know that there are many factors to consider in getting good sleep? Not a lot of people realize that sleeping well can be as complicated as doing our other waking activities. This is because the quality of your sleep can easily be affected by the slightest things—from the temperature of your room to your activity prior to hitting the sack. In fact, the Philippine Society of Sleep Medicine cites that finding a comfortable temperature for your room and skipping intake of caffeine and chocolate hours before bedtime can help promote better shut-eye. However, the biggest factor that affects one’s sleep rhythm is something you may not even consider at all: your mattress.

Many are under the impression that any mattress will do for their bedroom. If you really want some quality shut-eye, however, you need to find the right sleeping partner for yourself. In particular, it is recommended that you re-assess if your mattress is still giving you the support you need after years of using it.

Thankfully, there are now mattress providers that focus on providing products backed by research and rigorous testing to provide good sleep. The most prominent in the Philippines is Uratex with its collection of Sleep Specialist products. The local brand, which has gained household status for being in the industry for five decades, has consistently delivered in providing quality yet affordable collections.

Among these is the Uratex Thin Cotton product which is the brand’s most affordable, quality mattress. Developed using Uratex’s world-class technology, the two-inch thick foam promises to deliver comfort to its users. The product is designed to have medium firmness with open cell technology that not only provides the body with good support but also a more refreshing sleeping experience compared to other mattresses. The unit, which retails at a very affordable price of 1,499.75 PHP, comes with a pongee washable zippered fabric.

In addition to being a high-quality product, the Thin Cotton mattress also comes with a 5-year warranty like other Uratex units. Considering the product’s price tag, a consumer only pays less than a peso (0.82) a day if they get to use it for five years. On top of its products’ affordability and world-class quality, Uratex is also well-known for providing a good after-sales service that makes every purchase worthwhile.

To make sure that it only delivers the best to its consumers, Uratex uses the Quali-5 Cellular Technology which is a set of standards that ensures the quality of its products. Each Uratex product is made using the best raw materials and advanced equipment that uses world-class technology. Uratex also has an ISO 9001 accreditation to help guide its management processes and quality management system.

The Thin Cotton mattress is just one among the many Uratex products that will now be widely available in the VisMin region. As part of its 50th celebration of being in the industry, the company is now moving to expand its operations beyond Luzon with a mission to bring quality mattresses for every Filipino to lie on.

Currently, Uratex has over 500 retailers in Visayas and Mindanao, with a plan to open up more stores through various retailers in the coming months.

What to tell about Pablo Escobar, the King of All Narcos, will you love him or hate him?

In a third world country like ours and the latin nation, Colombia, survival is our main tool. In order to do that, you must be fit to do either of the two things. You can go with the righteous or you embrace the idea of being on the other side of the fence... the people who'd do anything just to keep them in power, full of greed, inhumane... people who risk other people's lives for their own sake. People who take advantage of other's weaknesses and use their absolute power and connections... all these things lead to illegal acts.

I have been reading news about Colombia, being the harbor of illegal drugs, partiicularly of cocaine or "Coke" as they say. As we all know, it is considered to be one of the most frequently used illegal drug globally. This is where Pablo Escobar, a Colombian and "King of All Narcos," become ilegally famous.

It was very evident in the movie that when greediness overpowers every human being, no amount of Godliness would ever take over. Blinded by the truth, by power and most especially by money. That is Pablo Escobar, he takes risks in everything but his family. I guess that's what made him different from the other drug lords or chiefs of any existing illegal groups or syndicates. His love for his family most especially his kids was unquestionable.

Yes, he had loved a woman other than his wife, by the name of the famous Colombian journalist, Virginia Vallejo and he had given his full trust to her so-called mistress. Numerous ill-fated killings, human abuse, drug cartels, illegal transactions, even child exploitation, pedophilia, massacre, bribery, stealing and others, name it, Pablo has it! The issue about trust and loyalty were of big importance to him.

Towards the end of the story, it has been proven that "Behind the downfall of every man is a woman." Virginia's trust and loyalty was compromised. In order for her to keep up with her life and to survive, she did what she thought was right but with a heavy heart. So what is it to tell about Pablo Escobar, the King of All Narcos... will you love him or hate him???

Penelope Cruz as Virginia and Javier Bardem as Pablo

The real-life xßcouple Javier Bardem and Penelope Cruz had once again proven how genuine and strong actors they were. They were undoubtedly a tandem to beat! While watching them on the screen, you'd really feel the strength and impact of their characters, they really seemed like they were the real Pablo and Virginia.

If you are fond of hard-action movies, then this is a must watch for you. Aside from the fact that the story was based from real life happenings, with great actors and that the writer was the real Virginia Vallejo herself, your money was real worth it.  This is Rated R16 'cause it contains uncut violent and bloody scenes.

---------------------------------------------------------------------------------------------

As our country continues its strict war on drugs, VIVA International Pictures and MVP Entertainment present ESCOBAR (Loving Pablo), a movie that chronicles the rise and fall of the infamous Colombian tagged as the “King of All Narcos”, Pablo Escobar.

Based on the best-selling book “Loving Pablo, Hating Escobar” by Virginia Vallejo, a distinguished journalist with whom Escobar had an affair with, it stars Academy Award winners and real-life husband and wife, Javier Bardem and Penelope Cruz.
Several documentaries and feature films have already been done about this son of a farmer who, at one point, became the seventh richest person on the planet, but Bardem (Skyfall, No Country for Old Men) and director Fernando León de Aranoa (Barrio, Mondays in the Sun, A Perfect Day), assure that their movie is nothing like what viewers have seen before.

Javier Bardem as Pablo Escobar

According to Bardem, “ESCOBAR (Loving Pablo) begins when Pablo Escobar is already an established businessman, but people hadn’t yet figured out how he was making his money. He meets Virginia, and through their relationship and her platform, he soon becomes a powerful public figure with a voice for the people.”

What the people of Colombia didn’t know was that the man they were supporting always had a selfish motive behind his actions, and it was too late when they finally came to realize it.

“That's where the movie starts,”  Bardem reveals, “and the story is that of the people around him as they realize what kind of a person he has become.”

As for de Aranoa, he believes that Pablo found a confidant in Virginia, “someone who he could convey his innermost ideas and intentions, which makes her a unique character and gives our story a fresh perspective.”

On how he and Penelope Cruz approached their characters, Bardem says, "Our portrayal of Pablo and Virginia are fully fleshed out human beings rather than stereotypes…We try to understand the motivation behind Pablo’s actions and why Virginia supported him at the beginning…That's why it’s called Loving Pablo - because this movie is through Virginia’s eyes and the eyes of those who loved Pablo the human being.”

Cruz, who had worked with Bardem in Woody Allen’s hit Vicky Cristina Barcelona, for which she won the 2009 Best Supporting Actress Award at the Oscar’s, prepared hard for her role.  "I’ve never met her," says Cruz, pertaining to Virginia Vallejo who currently resides in Miami, “but I've studied about 800 hours of various interviews and shows that she did as a journalist and TV presenter. She is the one that trained Escobar how to use the media to communicate, how to deal with the press, how to address the public. In his political career, she became a significant figure in his life.

Playing the significant role of Agent Shepard who is instrumental in the capture of Escobar is celebrated actor Peter Sarsgaard (The Magnificent Seven, Experimenter).   It was Bardem who emailed him and offered him the role.  “One of the things that Javier baited me with when he was first talking about the movie, is that he said that I had a lot of scenes with Penelope.”  He had worked with Cruz in the film Elegy, and he’s a fan of Berdam as well, so he readily said yes to doing this film with them.

Audiences can expect “amazing action moments” from this crime drama.   But most of all, Bardem emphasizes, “this story is about relationships – love, hate, greed, ambition, pain, and joy."  ESCOBAR (Loving Pablo) opens in cinemas nationwide on June 20, 2018.

Vivo levels up with the launch of X21 in the Philippines

“Vivo is launching it’s first X series here in the Philippines”

Young global smartphone brand Vivo is taking the game a notch higher, launching its first X-series model in the Philippines in June.

Vivo X21, the latest flagship smartphone, breaks world records as it introduces Vivo’s In-Display Fingerprint Scanning technology. It replaces the traditional rear fingerprint sensor commonly found on many smartphones.

The In-Display Fingerprint Scanning technology was preceded by the Under-Display Fingerprint Scanning Solution unveiled during the Mobile World Congress in Shanghai in 2017—the first of its kind in the world.

This was no surprise since Vivo has introduced many firsts in the past. It is the first to launch smartphone with a 24-megapixel selfie camera in V7 and V7+. It is also a pioneer in launching a 20MP dual front camera smartphone in V5Plus.
